Trip Summary

This is such a great time to fish in the Florida Keys. Less crowds, no traffic, cooler weather, more fishing. This week we hit the water for our limit of lobster and as a bonus, 4 nice hogfish with the spear for dinner. Here are 2 great lobster recipes that Chef Debi wanted to share with y'all. Lobster Ceviche 4 lobster tails Sweet (orange/red/yellow) peppers small assorted pack Cilantro, onion, lime, orange, s an p Jalapeños pineapple saute lobster Chop into small pieces or use processor. Chop peppers small, cilantro, onion. Salt pepper to taste. Add lime Mix well. Chill. Lobster Huevos Rancheros small tortilla refried beans eggs cooked lobster shredded cheese hot sauce chopped jalapeno guacomole sour cream salsa heat oven 350 place tortilla on baking pan spread refried beans to cover tortilla shred lobster on top of beans crack egg on top sprinkle cheese on top add hot sauce bake 15 minutes until egg is cooked garnish with sour cream, salsa, guacamole. Enjoy! Now on to the fishing! We landed 2 juvenile tarpon using a small live crab. The tarpon are hanging around. Fished inshore a bit for grouper and ended up with a non keeper gag. It is snook season and we have seen and caught a couple back in Flamingo. I was there yesterday and also caught a couple reds. Catching large snapper in the backcounrty boat wrecks using live shrimp. Permit and bonefish are showing up and they are waiting for you! Get out and fish!
